Matcha cake with butter frosting

It has been quite a while since the last post since I have been so busy with university studies... And maybe a bit of free time uni things...  Anyways, here is amazing Matcha cake recipe. For those who don't know what is matcha, it is Japanese green tea which has been grounded. It is bright green and it turns brown when it is getting older. Matcha has really unique taste and not everyone likes it so you should taste it before making the cake.Below the cake recipe, there is a recipe for butter frosting which I used on top of the cake.  Note: I am sorry but I am using cups on this since I have mixed couple of recipes I found on the internet.



Ingredients:

  • 2 3/4 cups of flour
  • 3 teaspoons of baking powder 
  • 1/4 teaspoons of salt
  • 2-3 tablespoons of Matcha powder*
  • 225 g of butter
  • 1 3/4 cups of sugar
  • 4 eggs
  • 2 teaspoons of vanilla extract 
  • 1 cup of milk
*Taste the dough and add the matcha powder with your own taste

Heat the oven to 175°C and take 24 cm cake mold. Spread a bit of oil all the round the mold and add breadcrumbs. That's how the cake does not stick to the mold. 



Take a small bowl and add flour, baking powder, salt, and matcha. Mix well. Take an electronic mixer and take soft butter and beat it until fluffy (this can take even around 5 minutes).  Add the sugar and mix again for about 3-5 minutes until soft and fluffy. Add the eggs one by one while mixing. Mix the vanilla in. Take the milk and flour mix and mix well in small portions. Make sure that the mixture is even. Pour it into the cake mold and put in the oven ASAP for 45-50 minutes. Take the cake out when you can take the toothpick out from it without any dough on it. If the cake starts to get too brown before it is cooked you can place a piece of baking paper on top of it.  Let the cake cool down completely before adding the frosting so it will not melt.










So for the butter frosting, you need:
  • 225 g of butter
  • 3 3/4 cups of powder sugar
  • 1 teaspoon of vanilla extract
  • pinch of salt
  • Food coloring (optional)
Take the warm butter and beat it with the electronic mixture until fluffy. Add the powder sugar and mix carefully. When even, add vanilla, food coloring, and salt and mix well. 



Cut the cake in half and maybe a thin layer of frosting inside. Add the top of the cake on top and spread the frosting all over the cake. Serve.
