Apple pie with vanilla sauce

Welcome back!

It's officially fall so it's time for delicious apple recipes.  Apple is one of the best ingredients since it's easy to use, cheap and it's easy to get. Apple can be used in sweet and savory dishes. Apple pie is classic. How ever there are at least million recipes for it. However here is my own recipe that is a bit crunchy and delicious.

Ingredients:  (Vanilla sauce recipe below)

  • 120 g of butter
  • 1,5 dl of cane sugar
  • 1 egg
  • 1 teaspoon of baking powder
  • 1 dl of flour
  • 1 dl of oatmeal
  • 4 small apples (Granny Smith etc)
  • Cinnamon
  • sugar

Start by taking the butter to room temperature and let is stay until soften. While waiting for the butter to melt you can slice the apples into nice thin slices. When the butter is ready add the cane sugar into it and whisk well with an electric whisk.  When the mix is nicely even add egg and oatmeal. Mix baking powder and flour and add the mix to the dough. Mix well until even. Heat the oven to 225°C.

Take a tablespoon and pour the dough into a dish. Start to spread the dough until the edge. Layer the cut apples on top into a shape wanted. Sprinkle cinnamon and sugar on top. Put the pie into the oven for around 25 minutes (Depending on the size of the pie it can take more or less time).  Let stay for around 10 minutes before serving.

Okay so then the vanilla sauce. Obviously, you can buy ready made one from the store or serve this with ice cream but I always think that home made is the best. So the classic vanilla sauce recipe:

Ingredients:  (Around 4 dl of ready sauce)
  • 3 dl of milk
  • 2 tablespoons of sugar
  • 1 tablespoon of potato flour (Also corn starch is okay)
  • 1 egg
  • Vanilla sugar

Start by adding everything except the vanilla sugar in the kettle and mix until totally even. Start to heat the stove but be careful since the milk burns easily. Mix all the time until the sauce starts to thicken. Take out from the stove and let stay until cool.* Add the vanilla sugar and serve.**

*You can fasten the cooling process by moving the sauce to some other bowl. Also putting the kettle into cool water.

** If you add the vanilla sugar before the sauce is cool it will get bitter so let it chill.

Enjoy!
