左公鸡 - Chinese Tso's chicken

Last week I had girls night with some of my exchange student friends. I made a lot of Chinese food (and that Matcha cake) so I will have many Chinese recipes coming up from that night. So I was thinking to start with this traditional 左公鸡 dish. It is a dish that has been named after the military leader who lived during Qing-dynasty. However, there is no proof that he ever tasted the dish even though the dish is most famous in Hunan province where he was from.



This dish is sweet, lightly deep-fried and super delicious. And the best thing is that it is so easy to make!

Ingredients:  (6 portions)
Takes around 50 minutes

  • 1 kg of sliced chicken
  • 1-1,5 dl of cornstarch*
  • 2 eggs
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 6 tablespoons of flour
  • 1 teaspoon of baking powder
  • 1,5 dl of oil
  • 4 teaspoons of sesame oil
  • 2 tablespoons of fresh ginger
  • 1,5 dl of green onion
  • 1,5 dl of water
  • 0,5 dl of normal vinegar
  • 1-1,5 dl of sugar**
  • 2 tablespoons of potato starch (also corn is okay)
  • 2 tablespoons of soya
  • 0,5 dl of oyster sauce
  • 0,5 dl of ketchup

* The amount depends from the chicken if the chicken has a lot of liquid on it it will need more

cornstarch.
** Taste and if it is sweet enough don't add more sugar than 1 dl

Okay so first take a bowl. Add the cornstarch to one and mix the chicken in it until lightly covered. Put aside. Take the eggs, salt and pepper and beat in a bowl until light and even. Add flour and baking powder and make sure there are no climbs.  Mix in with the covered chickens.






Take a pan and vegetable oil. Heat it up and fry the chicken. Cook until the chicken is ready, put aside and keep warm.

Cut ginger, garlic and green onion. Heat the pan with sesame oil and throw cut vegetables in. Fry until golden brown. Pour in water, vinegar and sugar and stir until boiling. Take a small bowl and mix soya and potato starch. Pour into the pan with ketchup and oyster sauce. Simmer until the sauce thickens and add the chicken. Cook until hot. Serve with cooked rice.
