Karelian stew - Traditional Finnish food

Nowadays one of the top trends on food market is traditional food. So that's why I was thinking to introduce you to one of my favorite traditional food. Karelian stew (karjalanpaisti). Since my mother's side comes from Karelia, which nowadays belongs to Russia I have learned a lot of traditional recipes from that area.

Karelian stew can be done with a different mix of meats. But it's most traditional version has beef and pork meat in big junks. The meat has to have fat on it so that it doesn't become too dry. If you have meat that has bones inside it's okay since it will give it more flavor. Traditionally Karelian stew is served with mashed potatoes and pickles and pickled beet roots. (Basic mashed potatoes recipe below)



Ingredients: (4 portions)
(Active time ~10 minutes)

  • 800 g of beef and pork (with or without bones, with some fat)
  • Allspice
  • Salt
  • water
First, start by heating the oven up to 200°C. Cut the meat into big cubes unless you have bought ready-made cubes. Put the meat in an oven-proof pot and aff salt and allspice with your own taste. Pour-in water until you can barely see the meat.



Put the pot into the oven. After 1 hour lower the temperature until 120°C. And let it stay there for at least 3 hours.*  Remember to check that there is enough water all the time.(So that it covers the meat).



*If you want to you can turn off the oven after 3 hours and leave the pot in for overnight. (Remember to check the water!)

So next for the mashed potatoes. With time and love, you can only make amazing mashed potatoes. And it's so easy!

Ingredients: (4 portions)
  • 1 kg of baking potatoes
  • Salt
  • 1-2 dl Milk (Skimmed or full one, how ever you like)
  • Butter (Not necessary)
Peel the potatoes and cut smaller so that they cook faster. Put the potatoes into the kettle and boil until cooked. (It's easier to mash them if they are a bit over cooked).


 Pour out the water and put the potatoes into multi-purpose kitchen machine. Mix and add milk little by little. You don't want it to get too sticky or too watery.  And salt if you feel like it and butter with your own taste. Mix everything up and serve.
