Cranberry-white chocolate cheesecake with meringue

Hello again!

I made this amazing cake(s) to our family meeting . Since I have really big family (and this was only to my mother's side) I needed to take two big cakes. However this recipe is for one 24 cm cake mold. On top I wanted to make something pretty so I tried to make the meringue with red stripes and they came out really cute. Notice that this cake is extremely easy to do as gluten-free in fact my cake is made with gluten-free cookies. 



Ingredients: (24 cm cake)

Bottom layer:

  • 250 g of any grain cookies (I used digestives)
  • 100 g of melted butter 
White chocolate layer:
  • 4 pieces of gelatine
  • 1 box (250g ) of quark
  • 300 g of cream cheese (natural)
  • 1,5 dl of sugar
  • 3 tablespoons of boiling water
  • 300 g of white chocolate
  • 3 dl of whipped cream
Cranberry layer:
  • 400 g of cranberries
  • 1 dl of sugar
  • 6 pieces of gelatin
  • 3 dl of whipped cream
  • 1 box (250 g) of quork
  • 300 g of cream cheese (natural)
Meringues:
  • 3 egg whites (big)
  • 2,5 dl of sugar
  • Any food coloring you wish

For the bottom layer of the cake start by covering the 24 cm mold with baking paper. Then crush the cookies and mix with melted butter. Then pour the mix in to the cake mold and when even put to the fridge.



For white chocolate layer start by putting the gelatin in to the cold water so it softens (If you use the powder please skip this part and check what does the box say). Mix together quark, cream cheese and sugar with electronic mixer. Then melt the chocolate carefully and let it cool down a bit. During this time whip the cream. Boil the water and add gelatin in that. Next mix together the chocolate and the cream cheese mix with gelatin sauce. Then carefully mix cream to mix with spatula. Pour on top of the bottom layer and put to the fridge for 1-1,5 hours.



During the time the cake is in the fridge you can do the meringue. Start by checking that the bowl you will use for whisking is not wet, dirty or even a bit oily since meringue is extremely delicate and heat the oven to 120 degrees. Then separate the whites and yolks. Then add the sugar to whites and mix with electronic mixer until the mix can be held upside down for 20 secs.  Take the piping bag and make lines in side of it with pasta color (Note that you can put the color to whole mix). Then pour all the meringue mix to the bag and make the meringues. Put to the oven for around 45 minutes (depending on the size).






For making the cranberry layer start by boiling together the cranberries and the sugar and (again) put the gelatin to the cold water. When boiled sift the cranberry mix through sieve. Mix the gelatin with the warm berry mix. Then whip the cream. Mix quark and cream cheese with berry mixture. Finally mix the whipped cream with the mixture with spatula. Then pour over the white chocolate layer. Keep in cold for the next day (or minimum of 6 hours).





Next day just decorate as you wish and serve!
