Muesli bread - Simple but delicious

Well hello again!

So today's easy recipe is muesli bread. Since I have moved out from home we have never had bread bought from the store. There are a couple of simple reasons why. First of all who does not love that smell and taste of fresh home made bread or buns? Seriously! Second of all my boyfriend eats a lot of bread... Like A LOT. So it is so much cheaper to just do it all myself... Besides at least I know what is inside. So I have a couple of simple recipes that I like to change once in a while so we don't get bored. But this muesli recipe that I created a couple of months ago has been our absolute winner.




Ingredients:  (4 big loaves of bread or around 20 buns)
(Active time ~25 minutes)


  • 1 liter of milk or water
  • 1 Fresh yeast (50 g)
  • 1/2 dl of sugar or honey
  • 1/2  tablespoon of salt
  • 5-6 dl of muesli 
  • 7-8 dl of bread flour (also normal flour is okay if you want to keep it white)
  • 100 g of butter or oil

So for the start heat the milk or water to body temperature (37-38 °C) and put it into a big bowl. Crumble the yeast into small pieces and add to the liquid. Let it rest for a minute or two and stir and make sure that there are no junks. Add sugar or honey and stir until it has dissolved. Add up the muesli and stir well. Let it stay in a warm place for around 30 minutes until it is bubbling.



 When the dough has rested for 30 minutes start by adding the salt with a good stir. Start adding the flour. I normally add about 4 dl at first and then start to add it up little by little so I can make sure that it doesn't become too hard. (This part is better to do with bare hands). When you start to feel that the dough is ready to melt the butter or take out the oil and add it to the dough and work it so it comes soft. If you feel like you can still add a bit of flour.



Add flour to your worktop and split the dough into 4 pieces. Take one piece and start to work it on top of the flour. When the dough feels soft and smooth make it either one big bun or make it a long bar. After dividing it to good size buns (remember that the dough will rise!). Put the bread or the buns on top of greaseproof paper or oiled tray. Let it rest for good 20-30 minutes under a baking cloth. 
Heat the oven up to 225°C. 

Put the bread or buns into the oven. With bread, it's gonna take ~25 minutes and with buns ~15 minutes. This is however straight influenced by the size of the bread or buns. You can check is it ready by taking out one and knocking on the bottom of it. If it sounds crispy it's ready.



Let the fresh buns or bread rest under the baking cloth for ~10 minutes before serving.
