Pulled pork burgers and sweet potato fries

Hello guys,

Once again I am back with a good party recipe which also suits for weekends. Or any day when you have a lot of time to make food. If you want to save some time you can buy some ready made buns or fries but I feel like homemade are the best ones.



Buns:
Ingredients: (8 buns)

  • 3 dl of water
  • 2 teaspoons of dry yeast
  • 2 tablespoons of sugar
  • 1,5 teaspoon of salt
  • 1 egg
  • 2 tablespoon of oil
  • 8 dl of flour
  • Sesame seeds 
Pulled pork:
Ingredients:
  • 2 kg of pork (kassler, shoulder roast etc)
  • 1 tablespoon of blackpepper
  • 1 tablespoon of salt
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of chili powder
  • 1 tablespoon of cajun
  • 1 tablespoon of paprika
  • 1 tablespoon of cayennepepper
  • 1 dl of brownsugar
  • roasting bag
Sweet potato fries:
Ingredients: (4 portions)
  • 3 big sweet potatoes 
  • 1,5 teaspoons of salt
  • 1 teaspoon of blackpepper
  • 2 teaspoons of chilipowder
  • 2 tablespoons of cornstracht
  • 3 tablespoon of olive oil
Caramelized onion:
Ingredients:
  • 2 red onion
  • sugar
So you should start with the pulled pork since it takes around 7 hours all together. Heat the oven up to 120°C. Mix all the spices together and put the meat in the roasting bag. Then rub the spices on top the meat and close the bag. Put it into an oven proof vase and make a small hole on the top of the bag so the steam can get out but the liquid stays in. Put to the oven to the low level. 



After 6 hours take out and take the meat out from the bag (NOTE! Save the liquid!) shred the meat with two forks into small pieces (Check the pic below). pour the liquid back if you didn't let it stay during shredding. Put back to the oven for an hour at 90 °C.




Next up the buns. Warm the water until it's the same temperature as your hand. Add yeast and sugar. Let it rest until the bubbles start to rise. Then mix salt and flour and mix it in. Add the egg. Work the dough for about 10 minutes and then let it stay for about 2 hours under a baking cloth until it has risen as twice as big.





Pour the dough on the baking tray with some flour and make 8 buns, sprinkle some sesame seeds on top of the buns if you like. Let it rest one hour before putting to the oven. After rising put them to the oven for 200°C for about 15 minutes.




Then it's time for the sweet potato fries. Peel and cut the sweet potatoes. Put them into a big bowl with all the seasonings but without oil. Mix well and pour to the tin plate. Add the olive oil and mix. Put to the oven for 10 minutes at 225°C



Last but not least: caramelized onion. Cut the onion to slices and put the pan with a bit of oil. Fry until it starts to get soft and add some sugar. It starts to get softer and softer. Fry until the onion is nicely soft and golden brown.


Serve the hamburgers with whatever you like. I served with all of this and homemade chili mayo, barbecue sauce, salad, tomatoes and cheddar cheese.
