Amazing mushroom risotto

I am a huge fan of Italian food and I love risotto. That creamy and soft rice with basically anything is perfect. I have made this recipe with mushrooms but you can switch them with basically anything for example carrots, saffron or other seasoning.

Ingredients: (5-6 portions)

    • 600 grams of risotto rice (carnaroli)
    • 1,5 - 2 l of chicken or vegetable broth
    • 5 big mushrooms
    • 1 big onion
    • 2,5 dl of white wine 
    • 200 g of parmigiano
    • Pepper
    • Salt
    • Butter 
    • Olive oil

Start by cutting the onion ready. Bring the broth to boil. Take a big pan and add a nice piece of butter and olive oil to it. Add onions and fry until golden brown. Add rice and make an even layer of it to the pan. Let stay for 2-3 minutes. 




Cut the mushrooms to cubes. Fry until golden brown. Add the wine to the rice and let the wine absorbed to the rice. Add broth until the rice get covered and let it always absorbed before adding more. When the rice is almost cooked add the mushrooms. When the rice is totally cooked add the grated parmigiano. Serve straight away.
