White chocolate cheesecake with home made lemon curd

Hello again!

It's been super long since last time but now I try to keep up with blogging again. I made this cheese cake to my boyfriend and me since it was our 3 year anniversary. I got the idea for the cake from amazing lemon curd which I love. But I decided to make lemon curd by myself. Of course you can also by it ready from the store. And if you ask from my boyfriend what he wants it is always gonna be white chocolate. So I just mixed them.



Ingredients: (18 cm cake)

For the bottom layer

  • 100 g of butter
  • 100 g of sugar
  • 1 egg
  • 100 g of flour
  • 1 teaspoon of baking powder
Home made lemon curd:
  • 1,5 dl of lemon juice
  • 4 dl of powder sugar
  • 2 eggs
  • 30 g of butter

Filling:

  • 1 pack (300 g) of Philadelphia cream cheese 
  • 1 dl of cream
  • 0,5 dl of sugar
  • 1 egg
  • 4 gelatin pieces
  • 180 g of white chocolate
  • 1,5 dl of lemon curd
For decoration:
  • White chocolate
  • Lemon crust
SO first of all mix soft butter and sugar until fluffy. Add one egg and mix well. Then add flour and baking powder. If the dough is really think you can add a bit of milk to it. Heat the oven for 200 degrees and bake until ready (25-35 minutes). After let it cool down.



For making the lemon curd, start by squeezing the lemons (you can also use ready made juice). Then mix it with powder sugar and eggs well. Then start to heat the mix slowly and mix the whole time. Mix is ready when it starts to boil and thickens. Then add butter and mix until even. Let it cool down.




For filling, whip the cream and then mix it with cream cheese. Put the gelatin to water (If in pieces). Add sugar and egg in to the cream-cream cheese mix. Melt the white chocolate and add to the mix. Then add the lemon curd. Finally take gelatin and boil it to few drops of water and add to the mix. Pour on top of the bottom layer. If you want to make the cake even more moist you can pour some lemon-sugar mix on top of the bottom layer. Put to the fridge and let it stay for at least 4 hours.
